I am a medical student who's exploring my options, can you specialise in plastic surgery through the army?

Hello,
The number and variety of specialty training jobs varies from year to year depending on the current requirement for doctors in the relevant specialty. The Army has surgeons who specialise in plastic surgery, but unfortunately there is no guarantee a job would be available at the time you apply. However, I have found the Army does try to accommodate specialty choices where possible, so during your time as a GDMO let them know that is what your aiming for.
Even if there are no jobs, I would strongly recommend doing 3 years as a GDMO. It is great fun, a fantastic experience, and there are lots of opportunities to build up your CV/portfolio for specialty applications (whether that be to the Army/Military or NHS).
