What do guard officers do whilst guardsmen are on sentry box duties?

Thanks for your question.
Like the remainder who are not on sentry, their role will be a QRF ( quick response force) for the palace they are manning.
The officer of the guard will do regular patrols to visit the guardsmen on sentry and take overall command of the palace.
If you are not on sentry, you would be on standby whether it be resting, manning a desk or on standby. If you are not on standby, you could be using one of the palace gyms or out on a run keeping fit.
