Military Working Dog units have a chain of command and therefore need officers to manage them at all ranks so yes you could. They are part of the Army Medical Services so you would need to join this corps to have a chance at working with them but you do not need to be a medical specialist to do so as there are administrative roles too (https://apply.army.mod.uk/roles/army-medical-service/medical-support-officer).
