if I joined the armoured cavalry as an officer would I still be able to have the role of gunner and not commander?
Additional information
I want to join the army and stay in for a long time so I want to take the route of joining as a officer but I don't want to command an Ajax I want to be a gunner

No. As an officer you will always be a commander.
However, You will receive some gunnery and driver training so that your not completely lost in an emergency.
In some cases, if there aren't enough commanders seats, an officer might take the position as a gunner to get some experience within a crew but it will not be a long term role.

is there a certain time scale I have to wait to go from driver to gunner or is it a matter of when a Ajax squad needs a new gunner

Usual RAC progression is Dvr, Gnr/loader and then commander (non officers).
Gunnery training will take place after a couple of years as a dvr, when your looking at promotion to LCpl (3/4 years).
However, if there is a shortage of gunners, people can fill that role before qualifying as a driver later. Its not the norm.
