If I joined as a combat medical technician would I then still be able to commission into a different regiment and role?

Combat Medical Technician
This would be possible, however you would need to still do all of the officer training in order to achieve this, if this is you ultimate goal the you should go straight for commission rather than being a CMT first as you can not be a CMT as an officer.
