Hi, thank you for the question. Thought I might wade in with some info (it's not my trade, I'm a Networks Engineer but obviously worked with lots of SCO's previously). As you've probably read your responsibility lies mainly with the kit and equipment used by the Unit (a place that is your main location of work, could be a Squadron or a whole Regiment for example). That could be literally anything from highly technical equipment right down to tent pegs. It all needs looking after. Maintenance is done by the teams working on the kit, but if something breaks or is faulty it will be down to those working in the stores to facilitate the return or 'backloading' of that item to its respective holder. You could also reasonably expect to conduct a fair few checks on lots of kit and equipment to maintain accountability and making sure it's all actually there. You will also help SP (Service Personnel - Soldiers working in the unit) with kit returns/issues/problems etc. It's also quite usual for SCO's to 'lean in' and help with unit MT (Military Transport) responsibilities. To be honest, that could end up being a big part of your job (lots of driving licences up for grabs if you want them...). Alongside all normal duties as above you have the usual odd-job here and there and PT (Physical Training) most days to help break the day up (as well as the odd NAAFI break ;)). That's kind of your normal 9-5 daily stuff (outside of Operations and Exercises) - outside those hours time is your own.
