apply for the normal sandhust officer scholarship now (I’m in year 12) and change it to the STEM one later or do i wait and apply for the stem one without applying to anything else at the beginning of university.

To be honest, it's down to your personnel preference.
Prior Uni exposure isn't necessary to become an Officer. If you want to great, but it really is down to yourself as an individual which path is right for you. As we all have different likes and dislikes.
