I forwarded your question to a veterinary colleague, her reply is below.
Everyone has to work with dogs as their career starts at 1st military working dog regiment. Following this they can then choose to pursue equine jobs, but there is no guarantee on whether that will be possible (some jobs can be more competitive than others).
Military vets can be based at 1 MWD, Cyprus, DATR, in London and in many other roles across defence.
