I am really interested in the Intelligence Corps and have grown up surrounded by military life but I worry that once I sign up, it's a job for life, which I want, but it sounds like a huge commitment

It is a huge commitment but one that doesn't need to be for life and why the Army has the ability to sign off. I am obviously hoping you will fulfil a whole career if you decide to apply. Best thing to do is talk with both your family and the Careers Centre.
My original minimum time to serve was 3 years and I have just started my 23 year of service so it can be for a long time but I've had friends leave at many stages and it was right for them at the time.
