Once you have committed your minimum time served - 3 years then yes you can have in your resignation which will take 12 months to complete. Your last day will be your 4 year point.
Once you have passed your 3 years service, you can hand in your termination notice at any point.

As James said, in terms of leaving the army once your initial period is up you can choose to 'sign off' in which case you will complete your final 12 months.
If by leave you mean time off/holidays its dependant on your unit. Usually leave is around holiday times. Christmas, Easter and summer leave. There are chances to take time off outside these holidays but is it down to what your unit is doing.
