Do you see many thin people come through? I’m around 5’1, 60kg, I’ve always found it tough to gain and maintain weight.

There are people of most shapes and sizes in the Army; however I will quote you what is states on the British Army jobs site in terms of Body Mass Index requirements:
•Over 18: BMI = 18 - 28
•16 & 17: BMI = 17 - 27
You might still be able to join if you are: •Male over 18 with a BMI between 28 and 32
•Female over 18 with a BMI between 28 and 30
It could still be possible to join the Army, following extra assessments.
As long as you fall within these brackets you'll be fine. I'd recommend using the NHS BMI test online to measure your BMI.
